Pumpkin Chocolate Chip Muffins

I found this recipe for Pumpkin Chocolate Chip Muffins on allrecipes.com. Below I've included the recipe, as well as my step by step photos. I will note that I made some substitutions as I went, which have been bolded below. A new seasonal favourite! They're delicious!!


Ingredients

  • 3/4 cup white sugar
  • 1/4 cup vegetable oil (substituted with applesauce)
  • 2 eggs
  • 3/4 cup canned pumpkin (substituted with fresh Pumpkin Puree)
  • 1/4 cup water (substituted with more pumpkin)
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup semisweet chocolate chips 

 

Step 1) Preheat the oven to 400 degrees F (200 degrees C). Grease and flour muffin pan or use paper liners. Note: I simply greased the muffin pan with becel 

Step 2) Mix sugar, applesauce, eggs.






Step 3) Add the pumpkin puree to the mixture





Step 4) In a separate bowl, combine dry ingredients.





Step 5) Add dry ingredients to Pumpkin mixture.





Step 6) Add as many chocolate chips as desired.


Step 7) Spoon batter into greased muffin pan. Note: Wipe the top of the pan clean of any batter drippings or splatter before baking to even the cooking surface and promote rising.



Step 8) Bake for 20 -25 minutes, checking them at approximately 12 minutes. After 20 minutes test with a toothpick, if the toothpick comes out clean they're ready.






Let them cool. Eat. Enjoy.
